HISTORY

On a crisp Autumn evening in November 2012, a group of friends got together in a rented artist’s bungalow to experience an event called ‘TASTE OF AUTUMN’; a multiple course dinner thrown by Michael Fietsam and David Horgen featuring local, seasonal ingredients, and a few theatrical surprises. The guests threw in enough money to cover the cost of the wine, and PS UNDERGROUND was born!

Word spread quickly and it wasn't long before each event brought new friends to the table. What started out as a hobby quickly became a “pop-up” dining adventure wherever a table would fit: art galleries, rooftops, gardens, shuttered restaurants, warehouses, and private estates. Over the next 6 years, PS UNDERGROUND hosted hundreds of dinners throughout the Palm Springs area and beyond, each with its own unique theme, and secret menu.

In 2019, we found a permanent home; a 4200-square-foot dining adventure space in beautiful Palm Springs, equipped with a state-of-the-art kitchen and a transformable event space that was customized to curate over-the-top theatrical culinary events. Our space is an intentionally blank canvas, where the creativity of our team of chefs, bartenders, servers, technicians, and performers work their magic.

Michael Fietsam

Co-Owner | Theatrical Wizard

Michael’s theatrical journey began upon landing a role in a local production of “Fiddler on the Roof” at the age of 14.  After several years of touring, performing, and directing shows across the US, he landed in Los Angeles, CA, working as an actor.  As many actors do, he supplemented his income by waiting tables, but he realized the close parallel of working in a restaurant to that of the theatre.  He found a new passion in the culinary world and his path took a sharp turn.  The next phase of his career took him in a new direction in some of the finest restaurants in the nation, culminating as the Food and Beverage Manager for gaming casinos across the West Coast.  

While he enjoyed his work in the hospitality business, his passion for theatre burned brightly just beneath the surface.  When Michael (and co-owner David) began PS UNDERGROUND, he melded his love for the theatre and the restaurant industry together into a singular unique experience in Palm Springs, CA.  Today, Michael thrives on curating exceptional dining experiences for PS UNDERGROUND guests.  He’s thankful for those who supported his early career and for those who followed and supported PS UNDERGROUND since its inception nearly 10 years ago.  The journey has just begun.

David Horgen

Co-Owner | Chef for all Seasons

Chef David Horgen was born in the Pacific Northwest into a culinary-inspired family.  His mother enjoyed canning and food preservation, and his father was an avid gardener.  He grew up assisting his parents with their passion for horticulture, and found all things food-related fascinating.  Encouraged by his family to spend more time in the kitchen, Dave learned how to make basic recipes, and began creating new and inspired dishes for dinner.

Chef Dave took his passion for cooking to a new level by working his way up the ladder in the restaurant business over the next several years. During his extensive career in restaurant management, he learned the internal workings of the kitchen and the front of house by mastering all aspects of the restaurant business, gaining knowledge along the journey .  Seeking more culinary freedom, David changed course and became a private chef, which without the confines of a set menu, took his creativity to an entirely new level. 

Today at PS UNDERGROUND, Chef Dave specializes in cultivating local, seasonal ingredients into unique and innovative fare.  His passion for creating new culinary sensations for his guests is inspiring, always focusing on all five senses. He savors the time, patience, and methodical pleasure involved in the preparation of a “spoonful of flavor”.  Chef Dave is always kept on his toes, since every PS UNDERGROUND event’s menu is completely different!  He looks forward to each event as an opportunity to surprise and delight every PS UNDERGROUND guest.

Each of our unique events is custom-designed to surprise and delight our guests’ five senses. We create bespoke culinary, visual, and musical adventures like nothing you’ve experienced before! There is always an element of surprise at a PS UNDERGROUND event.

Adding to the mystery, our menus and entertainment are kept secret right up until the moment we present them to you at your table. We source local, seasonal ingredients, and our menus are based on the theme of the event at hand. Course by course, your adventure unfolds.
